This decaf coffee has really surprised us with its sweetness and clean character. The coffee is grown at selected farms around Popayan and then transported to Caledas to be decaffeinated.
This decaffeination process is unique to Colombia. The caffeine is extracted by soaking the processed coffee sugarcane molasses which then ferment to produce Ethyl Acetate which dissolves the caffeine whilst providing a strong concentration medium to prevent the diffusion of the important flavour compounds which are thus retained inside the coffee, preserving its inherent sweetness and flavour.
Sweet and bold as a black coffee and with milk.
