This coffee was grown by Arles Ramirez on his farm Las Nubes in Genova, Quindio. Occupying some of the highest farming land in this region at 2100 masl aids greatly in the quality of his coffee.
This micro-lot of 100% Castillo has been hand picked ripe and sorted. This washed processed lot has been depulped then fermented under water for 24 hours to loosen the mucilage still attached to the coffee. It is then transferred to the raised beds where it is dried for roughly 12 days until it reaches ideal moisture content.
