The Dalton family were the first ever family to grow coffee in Guatemala's Antigua region when in 1864 they harvested their first crop. The entire operation has grown throughout the years in size with four farms around the original land. The family were also early pioneers in the specialty coffee world with their original farm Finca Filadelphia winning the inaugural and second ever Cup of Excellence competitions in 2001 and 2002.

 

The coffee region of Antigua is spread across a valley surrounded by three volcanoes that have developed the rich volcanic soil on which the coffee is farmed. High altitudes ranging from 1700- 1850 masl also lead to a sweeter and more complex cup.

 

This lot is from the Daltons farm Bosques de ('Forests of') San Francisco where they have been experimenting with Honey process coffees. Bourbon and Caturra varietals have been harvested, pulped and left to dry on patios with their mucilage still attached to the bean.
