This lot was produced by Camila Gomez and her family on their farm in Buesaco, Nariño. For this lot, cherries were picked at optimal ripeness then exposed to a anaerobic fermentation of 32 hours inside sealed GrainPro bags. The cherries were then pulped, washed and laid out to dry in the shadows under parabolic beds.
Camila took over her mothers farm after she passed away 10 years ago, she continues to push the boundaries of specialty coffee and experiment with different processing methods.
