This Honey processed lot was produced by Johan Vergara on his farm Finca Las Flores in San Isidro, Huila. The Caturra varietal originated in Minas Gerais, Brazil. It is a natural mutation of the Red Bourbon. Caturra produces more coffee and is more resistant to disease than Bourbon where leaf rust is widely prevalent. Caturra thrives in the Colombian climate and produces some exceptional tasting coffees whilst being a relatively reliable crop. This lot was picked ripe and left for 15 hours before being de-pulped. The remaining parchment coffee was dried on raised beds with the mucilage intact which when dried turns a carmalised yellow colour giving the honey process its name.
