This stunning coffee was grown by Omar Saul Tapiero on his farm in Acevedo, Huila. After harvesting the cherries from his Pink Bourbon tree's he enlisted the help of fellow producers Cofinet to aid in the Natural processing that was carried out at their specialised facilities in nearby Garzon. Here, the ripe cherries are first floated to sort out underripe cherries that float due to their lower density and are scrapped of the top - a unique approach with natural processed coffee where this step is often skipped in other countries. Afterwards the whole cherries are laid to dry inside parabolic dyers which enclose the drying area preventing rain and direct sunlight from spoiling the coffee whilst careful raking is performed on the coffee every day to aerate the coffee and aid in even drying to ideal moisture content.
