Apolinar Arevalo is a leading producer in the San Jose de Lourdes district of Peru's Cajamarca region. The first lot from Peru we ever purchased was from Apolinar back in 2018 with a lot that started a fascination with Peru.. He manages four farms in the area with this lot coming one of his highest farms 'El Diamante' which sits at 2000 masl.
He is a founding producer member of Lima Coffees and takes meticulous notes about his fermentation for each lot andtypically he picks his coffee selectively, depulps it the same day, and ferments it for about 30 hours at the highest part of the farm.
He dries it under solar covers for about 15 days. He is constantly working on fermentation experiments in an attempt to improve quality and consistency.
Peru's lush highlands offer the potential for small holder farmers to produce coffee with great cup quality due to the high altitude and prevalence of excellent varieties such as Caturra and Bourbon.
