The Gondo factory is operated by the New Kiriti Farmers Cooperative Society (F.C.S.), which has 560 members. Coffee is picked and brought to the factory that same day for selection and separation, as hand sorting happens before depulping begins. The ripe cherry is processed using fresh water from the local Kananahu stream, and the coffee is dried under full sun.

 

Roughly 5% of all coffee cherries only develop one seed inside instead of the classic two seeds that sit face to face inside the fruit - these are known as peaberry's and can be separated out by density and screen size. Coffees in Kenya are commonly separated and sold via this size grading system. We have released this lot in tandem with the larger sized AA lot from the recent harvest which provides an interesting comparison of the different seeds from the same varietals, harvest and process.
