Santiago Gomez grows coffee on about 4.5 hectares, primarily Caturra and Pache varieties. Coffee is picked ripe and depulped the same day, then fermented with water for 36–48 hours. After washing, it's spread on cement patios for about 3 days to dry in temperatures between 21–27°C (71–82°F).
