Ihara factory was founded in 1970, and is operated by the Mwirua Farmers Cooperative Society, which has only 500 active members who contribute to this mill. Each farmer owns about 1/8th of a hectare of land, and deliver their coffee in cherry form to the mill for sorting and processing. Once it's received, it's fermented underwater for 16–23 hours, washed three times, and dried on raised beds for 6–15 days.
 
Ihara is run by a factory manager as well as five full-time permanent staff.
