Marcial Olvera Diaz is the owner of El Pacasho farm located in the village of Nuevo Trujillo

in San Jose de Lourdes district in San Ignacio Province. For Marcial coffee is the primary source of his income alongside growing bananas, beans and yucca.  He’s proud of his family and the hard work they’ve carried out at El Pacasho.

 

As the farm is located at 1750 masl the temperatures can get quite cold so extra care is taken with the drying process once parchment has washed. Currently the farm has Bourbon and Yellow Caturra varieties but Marcial plans to expand on this and grow different varietals in the future. Flowering occurs during August and September with harvest spanning from July through to August.
