Maria del Rosario Olaya started growing coffee in 2000 but it wasnt until 2006 that she started to learn and shift her focus towards producing coffee for the emerging specialty market, with some initial help from the National Federation of Coffee Growers of Colombia (FNC).

 

Today she works directly with the dedicated team at Cofinet who take a strong hands on approach with everything at the farm level and can give invaluable feedback on how her coffees are tasting. For this Caturra lot the cherries are sat for 35 hours before being pulped, washed and then shade dried in parabolic driers until ideal moisture content is reached.
