This coffee hails from the town of Yabito Tome in Uraga which is part of Ethiopia's Guji Zone. Nestled between Shakiso and Hambela, Uraga has been increasingly gaining a reputation for some of the most distinct coffees of Ethiopia.
Occupying high altitudes in excess of 2000 masl, the small producers here grow heirloom varietals around the town and deliver to the Yabito Tome Washing Station. Great coffees from Guji are renknowed for an intense, almost confectionery like sweetness & effervescent clarity.
This lot has been processed as a Natural, meaning the cherries have been picked ripe, sorted and allowed to dry as whole cherries in a combination of full sun and shade. This is a grade 1 coffee, the top grade, which means it’s been sorted several times in order to remove the maximum amount of defects.
