Volcán Azul is a family owned group of farms and a exporting operation in Costa Rica with a history of producing exceptional coffee for over 200 years. Today, the farm is managed by Alejo Khale Castro. His dedication to quality and innovative drive has seen Volcán Azul consistently placing in the Cup of Excellence every year, including a 2nd spot in 2017. Volcán Azul have committed to a large acquisition of over 1500 hectares of natural rainforest for its protection and conservation around their farms and in other important biodiversity zones in the South of Costa Rica. Conservancy of natural resources, through the acquisition of extensions of natural rainforest for its protection and conservation are a major pillar of Volcan Azul's values. These facts, not just words, are small actions taken by one family to reduce air contamination and global warming. This is the contribution they want to make to mankind, this is the new awareness they want their future generations to inherit.
Alejo and his team produce a varied array of micro lots each season that portray the unique characteristics of each varietal, harnessing the expertise his team has in a wide range of processing methods as well as the wondrous gifts of nature and terroir the volcanic slopes of the farm have to offer. This lot was harvested from the farms San Isidro varietal - a new hybrid varietal that was developed with support from Volcán Azul for greater resistance to disease and leaf rust whilst providing excellent cup quality. These cherries were then processed as a Red Honey - a method Costa Rican producers have made famous throughout Central America and beyond.
