Mill: Sodu Washing Station

Region: Uraga, Guji Zone

Varietal: Heirloom Varietals

Process: Washed

Altitude: 2200 - 2250 masl

The Sodu washing station is located 2.5km from the town of Hara Adama, in the Uraga region of Ethiopia's Guji Zone. Uraga is renonwked for its high altitudes with the majority of coffee delivered to Sodu being grown between 2200 - 2250 masl. The high altitude, along with careful farming practices can lead to a higher degree of sugars in the coffee cherry and seed which can greatly increase the complexity and sweetness of the final coffee.

The ripe cherries are delivered to the Sodu station daily by local farmers during harvest time and then processed. The lots from the station will be separated into grades with Grade 1 being reserved for the best fruit and then processed with a much greater degree of control and sorting. For this washed processed lot, the coffee was depulped on the same day, fermented overnight before being washed clean and dried on raised beds. It takes 8-15 days to fully dry washed coffees under the sun here.
